Turkey & Quinoa Chili

Hey, friends!

I just made this tasty turkey and quinoa chili mix for my meal prep this upcoming week! It doesn't require a lot of ingredients and only took me about an hour to make. I basically just mixed a bunch of ingredients together and then added the amount of seasoning I wanted. 

  • 2 bell peppers
  • 1 package of ground turkey
  • 1/2 cup of quinoa
  • 1 can of corn
  • 1 can of garbanzo beans
  • 1 can of diced tomatoes
  • 1 1/2 cup of vegetable broth 
  • Avocado for topping
  • Seasonings

The first thing I did was cook the quinoa and ground turkey in separate pans. I cooked the turkey till it was brown but not fully cooked. While both were cooking, I chopped up the bell peppers and added them to a big pot with coconut oil. I like cooking with coconut oil bcause it keeps the peppers from burning and allows them to fully cook. After the peppers cooked for 5 minutes, I added the corn, diced tomatoes and garbanzo beans.  I seasoned them with the items below. I let the mixture in the big pot cook for about 10 minutes before adding the quinoa and ground turkey. I then added 1 1/2 cups of vegetable broth. I cooked the entire mixture on medium for 15 minutes, stirring occasionally. Lastly, I let it simmer for about 8 minutes before taking it off the stove..

I topped it off with some avocado and it was SO delicious. I usually make this chili when I need something super easy and it always turns out great. This is the first time using quinoa and garbanzo beans but I actually really liked it. 

I am trying to get better at making recipes. I typically cook whatever I want and don't pay attention to the amount and measurement of ingredients. I just throw everything together and call it a day. I am all about quick and easy meal preps but want to start writing down my recipes so that I can share them on here with all of you guys! Let me know what you think of this recipe. :)
